Nose – Heady autumnal fruit aromas, with hints of blackberry, raspberry and blackcurrant, developing withhints of sweet vanilla spice, black pepper and black olive.
Palate – A silky, rounded hit of blueberry and fruits of theforests with a creamy texture of French vanilla yoghurt,the long finish driven by supple tannins with hints of milk chocolate and spice.
Drink – Now through to 2025 & beyond.
Food Match – Smoked lamb Shoulder or Portuguese Roast Chicken.
Oak Maturation – New & 1 year old French Barriques & USA Hogsheads
Vinification – Fermented in 2T open fermenters, initial old soak for 3 days, hand plunged, left on skins for 5 days post alcohol ferment, basket pressed.
Volume – 3000 L
Technical – Alc:14.5% Minimal Sulphates
